I"m back!

I'm realizing it's been about 4 years since I haven't put anything on this blog... I am sooooo behind on this and I don't promise that I'll make a full come back... but, here I am for now.  I've been cooking a lot for clients but not for myself.  Since my mom arrived a month ago, I've done a few things in the kitchen for her.  I took some pictures and I'll share some with you... :-)

Because we have been traveling as well and eating out a bunch too,  I find myself eating pretty healthy if I'm home.  This is one of my breakfast lately.  A healthy version of hash brown meets eggs Benedict, except there is no egg...

So what I did here, was to cook a slice of bacon, cut in half, in a small skillet until it was brown.  Set it aside.  I added some cooked spaghetti squash seasoned with salt and pepper and a bit of smoked paprika.  Cooked it like hash brown in the bacon fat.  Flipped it.  Cooked it again until browned.  Transferred to plate, added a couple hand full of spinach to the skillet and a bit of water to wilt it.  I placed the spinach on top of the squash with some slices of avocado and the bacon pieces.  It was delicious!  Next time, I'll add the egg...  :-)
